Lately I have been on the hunt for the ultimate chicken salad recipe. And by ultimate I mean simple and delicious. We usually get the multi-pack of canned chicken breast from Costco, and our go-to is just to mix in a little mayo and relish and call it good. It’s ok but more meh.
Well, over the past couple of months I’ve had some amazing chicken salad sandwiches and it opened my eyes (and taste buds) to all the ways you can do chicken salad.
The search was on
I read the backs of recipe cans, asked friends for their favorite mix-in ingredients, and basically thought long and hard about what I’d want in my own ultimate chicken salad. (Yep, I’m taking my chicken salad sandwich very seriously).
After a little experimenting, I came up with a recipe that I think you’ll really like. It has a lot going on, and the flavors all go together really nicely. My big thing was amounts–how much of the different mix-ins should be added to get the flavor just right? This blend worked really well.

It’s a nice mix of texture and flavor–sweet, salty, and savory. I’ve also made it with a bit more pepper and gave it a little kick. Feel free to tweak the pepper to get the heat you like. And a big bonus is you’ll likely have all the ingredients on hand to save a trip to the store because who has time for that?
Kids might not be a fan but it’s perfect for grown-ups
Unfortunately my kids weren’t that excited about it. Because of that, I almost named it “Grown Up Chicken Salad” but that just sounded weird. Oh well! I’m ok with making a big bowl of this and having it for my lunches for the week.
- 1 large can of chicken breast (I used a Costco 12.5 oz. size can) or 1 small chicken breast, cooked and shredded
- ¼ cup diced celery (about 2 stalks)
- ½ t garlic salt (I use a garlic/parsley combo)
- ¼ cup diced dried cranberries
- ¼ cup diced red onions
- ¼ cup diced apples
- 3-4 T mayo
- ¼ cup sunflower seeds
- ¼ t pepper
- ¼ t basil
- Prep all mix-ins
- Mix all ingredients in with chicken
- Mix in mayo, then dry seasonings
- Chill before serving
